In keeping the vision of creating creative community, Laughing Gecko Campgrounds (near Quepos) has been chosen as the venue for the 2nd annual BURNING SPIRIT FESTIVAL.   In the spirit of Burning Man, this is YOUR opportunity to create YOUR festival.  It will be the last weekend of Aug. (following the BM 10 principals, with 'leave only a positive trace').  Well be providing the space and the music. 

We ask you to provide your own tent and meals, and beverages. (or donate food for the community) Those who wish to really "create community"  may arrive a  week (or 2)  early and help build the "dance temple" or the effigy, and there is lots of bamboo if you wish to create a tepee village. Please bring black plastic or tarps as the rains seem to have come early this year.   Come early and help create..... Who would like to sculpt Mother Nature?   if you have the time and creativity, we have the space and I have been growing 3 types of grass for the sculpture. . 

We ask everyone to pay a 3,000 colone daily "membership fee" to the commUNITY. ($5.00 if paid in advance )   This helps buy food for the crew preparing the site,  pays the electric and equipment rental for the festival, and it keeps it a NON-commercial (member only)  event, meaning less gov. permits.  NO VENDING, but there are stores and
restaurants  and rooms for rent in Londres. Rooms are available nearby at Finca Amanecer, and 2 or 3 other locations..

There Are Shocking Differences Between Raw Honey And The Processed Golden Honey Found In Grocery Retailers


There are well over 30 commercial producers of honey that have no traces of pollen and lack beneficial vitamins and enzymes among a host of other natural constituents which are removed due to pasteurization and processing. Most golden honey you see at your local grocery is dead and far from the health promoting powerhouse of its raw unpasteurized counterpart. Processed honey is not honey at all and if you desire any kind of health benefits, you must stick to the real stuff. In the U.S., the Food and Drug Administration says that any product that’s been ultra-filtered and no longer contains pollen isn’t honey. However, the FDA isn’t checking honey sold in the U.S. to see if it contains pollen.
Ultra filtering is a high-tech procedure where honey is heated, sometimes watered down and then forced at high pressure through extremely small filters to remove pollen, which is the only foolproof sign identifying the source of the honey. It is a spin-off of a technique refined by the Chinese, who have illegally dumped tons of their honey — some containing illegal antibiotics — on the U.S. market for years.

Food Safety News decided to test honey sold in various outlets after itsearlier investigation found U.S. groceries flooded with Indian honey banned in Europe as unsafe because of contamination with antibiotics, heavy metal and a total lack of pollen which prevented tracking its origin.

They purchased more than 60 jars, jugs and plastic bears of honey in 10 states and the District of Columbia.

The contents were analyzed for pollen by Vaughn Bryant, a professor at Texas A&M University and one of the nation’s premier melissopalynologists, or investigators of pollen in honey.

Bryant, who is director of the Palynology Research Laboratory, found that among the containers of honey provided by Food Safety News, 76 percent or more had the pollen removed including stores such as Walgreens, Costco, Walmart, Sam’s Club, TOP Food, Safeway, Giant Eagle, QFC, Kroger, Metro Market, Harris Teeter, A&P, Stop & Shop and King Soopers.

Why Remove the Pollen?

We can only assume to prevent the majority of the public from obtaining all the benefits found in raw honey. Removal of all pollen from honey “makes no sense” and is completely contrary to marketing the highest quality product possible, Mark Jensen, president of the American Honey Producers Association, told Food Safety News.

“I don’t know of any U.S. producer that would want to do that. Elimination of all pollen can only be achieved by ultra-filtering and this filtration process does nothing but cost money and diminish the quality of the honey,” Jensen said.

“In my judgment, it is pretty safe to assume that any ultra-filtered honey on store shelves is Chinese honey and it’s even safer to assume that it entered the country uninspected and in violation of federal law,” he added.

What’s Wrong With Chinese Honey?

Chinese honey has long had a poor reputation in the U.S., where — in 2001 — the Federal Trade Commission imposed stiff import tariffs or taxes to stop the Chinese from flooding the marketplace with dirt-cheap, heavily subsidized honey, which was forcing American beekeepers out of business.

To avoid the dumping tariffs, the Chinese quickly began transshipping honey to several other countries, then laundering it by switching the color of the shipping drums, the documents and labels to indicate a bogus but tariff-free country of origin for the honey.
Most U.S. honey buyers knew about the Chinese actions because of the sudden availability of lower cost honey, and little was said.

The FDA — either because of lack of interest or resources — devoted little effort to inspecting imported honey. Nevertheless, the agency had occasionally either been told of, or had stumbled upon, Chinese honey contaminated with chloramphenicol and other illegal animal antibiotics which are dangerous, even fatal, to a very small percentage of the population.

Mostly, the adulteration went undetected.

What’s Are Differences Between Raw Unpasteurized Honey and Pasteurized Processed Golden Honey?
The processing of honey often removes many of the phytonutrients found in raw honey as it exists in the hive. Raw honey, for example, contains small amounts of the same resins found in propolis. Propolis, sometimes called “bee glue,” is actually a complex mixture of resins and other substances that honeybees use to seal the hive and make it safe from bacteria and other micro-organisms. Honeybees make propolis by combining plant resins with their own secretions. However, substances like road tar have also been found in propolis.

Bee keepers sometimes use special screens around the inside of the hive boxes to trap propolis, since bees will spread this substance around the honeycomb and seal cracks with the anti-bacterial, anti-viral, and anti-fungal resins. The resins found in propolis only represent a small part of the phytonutrients found in propolis and honey, however. Other phytonutrients found both in honey and propolis have been shown to posssess cancer-preventing and anti-tumor properties. These substances include caffeic acid methyl caffeatephenylethyl caffeate, and phenylethyl dimethylcaffeate. Researchers have discovered that these substances prevent colon cancer in animals by shutting down activity of two enzymes,phosphatidylinositol-specific phospholipase C and lipoxygenase. When raw honey is extensively processed and heated, the benefits of these phytonutrients are largely eliminated.

Speakers at the First International Symposium on Honey and Human Health, presented a number of research papers. The research was applied to raw unpasteurized honey and the findings included:
  • FRIENDLY BACTERIA – Different varietals of honey possess a large amount of friendly bacteria (6 species of lactobacilli and 4 species of bifidobacteria), which may explain many of the “mysterious therapeutic properties of honey.”
  • Lactobacilli, which deliver protective and beneficial benefits to bees as well as humans, were not found in the bees’ honey stomach during the winter months when the bees under investigation were fed sucrose, indicating that certain bee-feeding practices may have dangerous and unwanted effects on bees.
  • BLOOD SUGAR CONTROL – Honey may promote better blood sugar control. Proper fueling of the liver is central to optimal glucose metabolism during sleep and exercise. Honey is the ideal liver fuel because it contains a nearly 1:1 ratio of fructose to glucose. Fructose “unlocks” the enzyme from the liver cell’s nucleus that is necessary for the incorporation of glucose into glycogen (the form in which sugar is stored in the liver and muscle cells). An adequate glycogen store in the liver is essential to supply the brain with fuel when we are sleeping and during prolonged exercise. When glycogen stores are insufficient, the brain triggers the release of stress hormones–adrenalin and cortisol–in order to convert muscle protein into glucose. Repeated metabolic stress from cortisol produced when less than optimal liver glycogen stores are available during sleep, leads over time, to impaired glucose metabolism, insulin resistance, diabetes, and increased risk for cardiovascular disease and obesity.
  • Experimental evidence indicates that consumption of honey may improve blood sugar control and insulin sensitivity compared to other sweeteners. The body’s tolerance to honey is significantly better than to sucrose or glucose alone. Individuals with greater glucose intolerance (e.g., those with mild diabetes and Type 1 diabetes) showed significantly better tolerance to honey than sucrose. In addition, the antioxidants in honey, which have been shown to reduce oxidative stress, frequently by a larger factor than can be explained by their actual amount, may be beneficial for diabetics and help to improve endothelial function (the function of the cells that make up the lining of our blood vessels) and vascular health.
  • WEIGHT MANAGEMENT – In a year-long animal study comparing the effects of sucrose, honey and a low glycemic index (GI) sugar-free diet, rats on the honey-based diet showed: reduced weight gain and percentage of body fat, decreased anxiety, better spatial recognition memory, improved HDL cholesterol (15-20% higher than rats fed sugar or sucrose diets), improved blood sugar levels (HA1c), and reduced oxidative damage.
  • COUGH SUPPRESSANT – Honey has been shown to be a more effective cough suppressant for children ages 2-18 than dextromethorphan (see “One Study Finds Buckwheat Honey To Be a Successful Cough Medicine” earlier in this Health Benefits section)
  • BOOSTS IMMUNITY – Honey boosts immunity. Research conducted in several hospitals in Israel found honey effective in decreasing the incidence of acute febrile neutropenia (when high fever reduces white blood cell count) in 64% of patients. Honey also reduced the need for Colony Stimulating Factor (a compound produced in the cells lining the blood vessels that stimulate bone marrow to produce more white blood cells) in 60% of patients with acute febrile neutropenia; increased neutrophil count (another type of white blood cell), decreased thrombocytopenia (low platelet count), and stabilized hemoglobin levels at >11 gm/dl (a bit low but way better than full blown anemic).
  • 32% of the cancer patients involved in the above immunity research reported improved quality of life.
  • WOUND HEALING – Several mechanisms have been proposed for the wound healing benefits that are observed when raw honey is applied topically. Because honey is composed mainly of glucose and fructose, two sugars that strongly attract water, honey absorbs water in the wound, drying it out so that the growth of bacteria and fungi is inhibited (these microorganisms thrive in a moist environment). Secondly, raw honey contains an enzyme called glucose oxidase that, when combined with water, produces hydrogen peroxide, a mild antiseptic. Previous studies have shown that Manuka honey decreases the surface pH of wounds (so germs can’t survive) and can help keep bacteria out. While all honey does contain anti-bacterial properties, commercial honey is usually pasteurized and processed, which decreases its beneficial properties. Manuka honey is special because it produces a different substance called methylglyoxal, which has unique antibacterial activity.
  • ANTI-BACTERIAL – One antioxidant absent in pasteurized honey ispinocembrin, which is unique to honey and is currently being studied for its antibacterial properties. One laboratory study of unpasteurized honey samples indicated the majority had antibacterial action againstStaphylococcus aureus, a common bacteria found readily in our environment that can cause infections, especially in open wounds. Other reports indicate honey is effective at inhibiting Escherichia coliand Candida albicans. Darker honeys, specifically honey from buckwheat flowers, sage and tupelo, contain a greater amount of antioxidants than other honeys, and raw, unprocessed honey contains the widest variety of health-supportive substances.
  • FREE RADICAL PREVENTION – Daily consumption of raw honey raises blood levels of protective antioxidant compounds in humans, according to research presented at the 227th meeting of the American Chemical Society in Anaheim, CA, March 28, 2004. Biochemist Heidrun Gross and colleagues from the University of California, Davis, gave 25 study participants each about four tablespoons buckwheat honey daily for 29 days in addition to their regular diets, and drew blood samples at given intervals following honey consumption. A direct link was found between the subjects’ honey consumption and the level of polyphenolic antioxidants in their blood.
  • HELPS HIGH CHOLESTEROL – In a series of experiments involving healthy subjects and those with either high cholesterol or type 2 diabetes, honey has proved itself the healthiest sweetener.In healthy subjects, while sugar and artificial honey had either negative or very small beneficial effects, natural honey reduced total cholesterol 7%, triglycerides 2%, C-reactive protein 7%, homocysteine 6% and blood sugar 6%, and increased HDL (good) cholesterol 2%. (Like C-reactive protein, homocysteine is a significant risk factor for cardiovascular disease.)In patients with high cholesterol, artificial honey increased LDL (bad) cholesterol, while natural honey decreased total cholesterol 8%, LDL cholesterol 11%, and C-reactive protein 75%.And in patients with type 2 diabetes, natural honey caused a significantly lower rise in blood sugar than either dextrose or sucrose (refined sugars). So, enjoy a little honey in your morning coffee, lunchtime yogurt or afternoon cup of green tea. Looks like a daily spoonful of honey may help your need for medicine go down.
How Can You Tell The Difference Between Pure Honey and Artificial Honey?
Inverted sugar solutions and glucose syrups or corn are often used for making fake honey, mixing with it, or replacing it entirely.

Another method for falsification of honey is feeding bees with sugar products.

The “innocent” method of honey falsification is the addition of water (honey containing more than 25% water, is considered to be falsified)

Worldwide, adulterated honey is deemed, counterfeiting ranks second among the food industry – the extra virgin olive oil.

Artificial honey is a food with many shortcomings, representing a solution of invert sugar syrup, which comes from refined sugar, which often add other ingredients, generally summarized as: glucose syrup, dyes, flavors and enhancer flavors. Such a synthetic preparation can be achieved in domestic conditions, but you need to know it is not healthy. Artificial honey contains a physical mixture of glucose and fructose focused elements that have separated from the previous combination, that of sucrose (sugar). It is known that both are in high concentrations, even more dangerous than the original form, crystalline carbohydrates entering the category of very rapid absorption substances.

Artificial inverted sugar, also called artificial honey, is a syrup, soluble in water, with sweet taste, resulted from the hydrolysis of sucrose. It is widely used in food industry as sweetener, attracting criticism from many nutritionists and doctors.


4 WAYS TO SPOT ARTIFICIAL HONEY

1. The Thumb Test

Put a drop of the honey on your thumb. If it spreads around right away or spills, it’s not pure. If it stays intact, it’s pure.

2. The Water Test

Fill a glass of water and add one tablespoon of “honey” into the water. Pure honey will lump and settle at bottom of glass. Adulterated and artificial honey will start dissolving in water.

3. The Shelf Life Test

Pure honey will crystallize over time. Imitation honey will remain looking like syrup, no matter how long it is stored.

4. Light a Fire 

Dip the tip of a matchstick in “honey”, and then strike it to light. Natural honey will light the match easily and the flame will burn off the honey. Fake honey will not light because of the moisture it contains.

HEATED POOLS & JACUZZI's in Costa Rica (hahahahahahaha!!!)


Peeps, Costa Rica is NOT the U.S./Canada - as much as many of you might like or try for it to be!!  One of the MOST noticeable ways is in POOLS and JACUZZI's!!  SOOOOO MANY tourists say they "NEED A POOL" in their property prerequisites but what they do NOT know is VERY FEW POOLS are actually HEATED!!!!

(this is the HUGE pool that we had in the first home I lived in in Pozos de Santa Ana, Costa Rica.  I sort of though, since it was a lower/hotter area, the pool would get warm enough.  NOT!!!  As inviting as it was, in the 11 months I lived there, NOT ONCE did I see "adults" in the pool and I could see it from my livingroom•kitchen window!!)


Now, at the beach areas, that's not such a biggie - but when you're talking the Central Valley and hilly areas - where you're at 3,000 feet elevation - they can be downright FREEZING (at least to wimpy me!!).

WHAT TIME OF YEAR IS HOTTER IN COSTA RICA?
The "hottest" months in Costa Rica tend to be AROUND January to early April.  Great for you Snowbirds - but that's not a big window - and if we have a late Windy Season (as we had the past year), it can start later!!

Even ALL the gyms I know in Costa Rica that have pool - are NOT heated by MY standards (a nice pool to get me in is around 85º!!  Other than that it WILL take me about 10 minutes to get into the water. I do NOT do cold showers or pools!!)!!  Even the expensive/VERY modern/U.S. based World Gym's pool is not heated. 

ESCAZU  -  There is a pool for Water Aerobics/Free Swim in Escazu that has a semi-heated pool (not really by MY standards but for Costa Rica it is -

WHAT ABOUT JACUZZI's?
There IS a GOOD chance if you find a place near the beach that the jacuzzi is NOT HEATED so if a HOT Jacuzzi is important to you (I don't get the concept of cold water beating on my back - NOT very relaxing to ME!!!!!!!!!), I'd EMAIL the property and ask if the Jacuzzi is heated AND FUNCTIONING as I've found MANY Jacuzzi's in Costa Rica - ESPECIALLY Jacuzzi BATHTUBS - do NOT function (it's HARD to find someone to repair them and they're MEGA EXPENSIVE!!).

OH, and the OTHER thing I've found, RARELY will Hot Water Tanks in Costa Rica fill even a REGULAR bathtub so JUST because the jacuzzi DOES work - the water may not get hot enough (unless you want to boil/microwave a bunch of water and transport it into the tub.  So much for a long soak!!!).

 LOOKING TO RENT A HOME OR APARTMENT WITH A HEATED POOL OR JACUZZI?
From what I've seen my 8 years living in Costa Rica is IF you found a pool that was heated, you'll be paying at LEAST $1,000+++ in rent and electricity will most likely NOT be included in the rent!!

"Solar" will NOT get ANYTHING warm enough the 6+ months a year we have rain because it NEEDS SUN to heat it and what we have during that time are MONTHS and MONTHS of clouds!!!!


Added to your electricity bill WILL most likely be $300 or so a month MORE - JUST to heat a "heated pool" or jacuzzi (NOTE:  my electricity bills have been more for me in Costa Rica in in Florida [withOUT using an air-conditioner]).

ADDED to the chemicals needed to clean that pool are EXPENSIVE!!!!!!!!!!

An option you MAY want to look for is a place with a GEO-THERMAL POOL.  I'd imagine IF you found such a place, it would be more in areas with Hot Springs - Volcanoes - like Arenal•La Fortuna or Cartago MAYBE - though I sure have not seen many.

AHHHH - but does it actually WORK????
As mentioned above in the Jacuzzi area, just because a website or brochure SAYS it has a "Heated Pool" or Jacuzzi - does NOT mean it is FUNCTIONING (as mentioned above, #1 because finding people to actually REPAIR it is few and far between - AND - PARTS are VERY VERY HARD to come by so they can take MONTHS if they're ordering them from the States (if it's being shipped) and have EXPENSIVE "Aduana"•Customs Taxes - AND - parts are in general tend to be LOTS LOTS LOTS more $$$$•expensive in Costa Rica!!!!

There's a GOOD CHANCE that if you rent a home with a Jacuzzi anything - or a pool, they MAY make YOU responsible for repairs so be forewarned!!!

TAMALE MAKING Costa Rica style - a Step-By-Step guide from the Tico Times

If you’re Costa Rican, then you have likely spent at least part of every Christmas season in the company of your entire extended family making tamales. The process can take days, but it ends with a a giant pot of banana wrapped tamales that last the whole Christmas season.
For those lacking a Costa Rican grandmother or the patience to wait until December, there is Antojitos de Maíz - facebook.com/pages/Antojitos-de-Maiz/179719208714046 - a restaurant in San Isidro de El General completely dedicated to corn.

The restaurant’s tamales are such a hit that local hotel Monte Azul has begun sending its guests over for cooking classes. So, with the illusion that we would soon be professional tamale chefs, two Tico Times reporters headed to Antojitos for a crash course in tamale-making. It turns out, that there is a good reason Costa Ricans only make tamales once a year. But if you happen to have hours of free time, there are few Tico dishes as delicious as homemade tamales.

Step 1: Preparation and ingredients
 Making tamales is labor intensive, with each ingredient encompassing an entire meal in itself. To speed up the process, we were greeted in the Antojitos kitchen with bowls of pre-cut and pre-cooked ingredients, but to make your own tamales you first need to prepare the filling. We used a spicy chicken filling in our tamales, but there are other meat and vegetarian variations.

We put chicken, carrots, cilantro, sweet chill and cheese in our tamales.

While you can fill your tamales with practically anything, traditional Costa Rican tamales almost always use saffron rice (which needs to be prepared separately), cilantro, sweet peppers and carrots. Though most of the fillings are optional you will need the following:
  1. Dried corn or masa mix
  2. Skinned potatoes
  3. Square-cut plantain leaves
  4. String
  5. A stove or bonfire
  6. A large pot for boiling

Step 2: Making the masa
Making up the corn part of the tamale is masa, the spongy outer layer over the filling. Traditionally masa is made by manually grinding up dried rice kernels and mixing the resulting powder with water.

Traditional tamale makers start with dried ears of corn, scrape off the kernels with a knife and grind the masa by hand.

Because they produce mass quantities of masa, Antojitos uses a grinding machine, and because no one has the time or energy to grind up corn with a rolling pin, most Costa Rican households use pre-made masa from a grocery store.

 You then mix your ground masa with skinned potatoes and water to create dough and cook this on the stove until it has a mashed potato-like consistency. At Antojitos we added chicken broth to the masa, but you can also add vegetables or other meat broth.

Mix the masa and potato dough and heat it until it is the texture of mashed potatoes.

Step 3: Wrapping the tamales
Once everything is cooked, it’s time to actually assemble the tamales using the plantain leaves and string. Spread a plantain leaf onto a counter and scoop two or three ladles full of masa into the leaf’s center.

Finally putting all of the ingredients together into a wrapped tamale.

Next, add whatever it is you want to fill your tamales with on top of the masa trying not to pack too much onto the leaf. We added chicken, carrots, sweet chili, cilantro and cheese.

Fold the long sides of the leaf over the masa puddle and roll the ends once or twice (until it stays in place). Then fold the other two sides in forming a square. Finally, wrap the string both ways over the leaf and tie it in a bow forming what looks like a plantain leaf present.

After wrapping your tamale should look like a tiny, green wrapped present.

Step 4: Set to boil
Gather your tiny plantain leaf packages and transfer them into a pot of water for boiling. Be sure to leave the pot covered in order to steam the tamales. Boiling time will vary depending on the number of tamales.

Usually you let the tamales cool before eating them to give them time to take shape, but we just couldn’t wait and ate our tamales mushy and hot.

BLOOD TEST for DRIVER'S LICENSE's in Costa Rica NO LONGER NEEDED - Why is that????

Blood Type Requirement On Costa Rican Drivers License Is Of No Use(You do NOT NEED the BLOOD TEST to get your drivers license in Costa Rica [this is an OLD ARTICLE explaining the logic behind it])

In May 2008 it became mandatory that the persons blood type be included on the drivers license. However, due to protocol and security, doctors do not base their decision on that information when it comes to a blood transfusion.

Furthermore, the Colegio de Médicos (College of Physicians) recommends removing the requirement all together.

On may 10, 2008, any person obtaining a drivers license for the first time or renewing their license is required to provide their blood type test, which is prominently printed on the drivers license, adding between ¢3.500 and ¢8.000 colones to the cost of obtaining or renewing a drivers license.

According to the Ministerio de Obras Públicas y Transportes  (MOPT), a total of 107.388 drivers who obtained their drivers license for the first time and 322.741 who renewed their license were required to provide their blood type.

Roulán Jiménez, president of the Colegio de Médicos, is clear that the blood type on the drivers license has no benefit, other than to generate fees for doctors providing exams and an added expense for drivers.

"In the event a person is taken to a hospital, absolutely no one will give you a drop of bolod without doing a blood test first", Dr. Jiménez told the La Nación in an interview.

"If a patient needs 100 transfusions of blood, they will be submitted to 100 blood tests", the doctor affirmed.

The requirement of the blood type is based on article 77 of the Ley de Tránsito passed in 1993, but it wasn't until 2008 that was made mandatory.

Ministerio de Obras Públicas y Transportes (MOPT) officials say they are unaware of the ineffectiveness of the requirements, but nonetheless are obligated to uphold the law.

Hugo Jiménez, director of Educación Vial for the MOPT, said "useful or not we have to respect a mandate by the Constitutional Court".

Legislators tothe reforms of the Ley de Tránsito that was approved in November 2008 and whose full effect will be on March 1 this year, just changed the number of the article mandating the blood type test.

And that Costa Rica is the FIRST country in the Continent to PROHIBIT Sports Hunting  - news.co.cr/hunting-for-sport-outlawed-in-costa-rica/18707 (punishable with a fine of up to 1,800,000 colones ($3600)?

Sports fishing and hunting for subsistence/to sustain one's self/food or to control species is STILL legal.

Costa Rica is also intending on CLOSING ALL it's government run/owned Zoo's and release them into the wild or sent to rescue centers and they plan on turning the Simon Bolivar Zoo in central San Jose into a botanical park.

Immigration agents now online with Interpol headquarters

The immigration agency and judicial police revealed Thursday that agents at the country's ports of entry have been online with the International Police Agency since April. This gives agents checking arriving foreigners access to real time data that may contain information sufficient to deny entry.

The local Sección de Interpol is now within the Judicial Investigating Organization.

The  Dirección General de Extranjería said that its agents would be in direct contact with the main Interpol office in France and be on the lookout for warrants, notices of fugitives and other police information.

The system also will be able to identify abducted children and missing persons, said Fredy Mauricio Montero Mora, vice minister of  Gobernación,
